I could tell you about all the reasons why you should be eating better. I could mention how important it is to shop local. I could ask for support of the rebirth of Downtown Fort Wayneand the businesses that make up its commerce. Instead I’m going to tell you this. The food at Pembroke Bakery is homemade and just plain good. So good. In addition, eating there will actually help your health instead of harm it.

Their menu boasts vegan and gluten-free options. All of their soups are made from scratch and loaded with nutrition. When you look at their salad options you know you will find fresh, organic options. They offer homemade breads and even make their own hummus, the first I’ve heard of this option in Downtown Fort Wayne. In addition to this, the staff is incredibly friendly and quick to answer any questions about their unique menu.

I ordered their chicken-apple salad sandwich on wheat with spinach and tomato. The tomatoes were so fresh and the chicken-apple salad was the perfect combination of soft and crunch combined. I also had a bowl of their homemade Potato, Squash, and Corn Stew. Compiled of roasted butternut squash, red potatoes, local sweet corn from husk, caramelized onions and garlic, Fresno chiles, paprika, sea salt, black pepper, and olive oil, it completely hit the spot and left me feeling perfectly full and energized.

The soup came with a side and I opted for their natural-based oatmeal raisin cookie. I washed it down with a glass of water. It’s clear that the folks at Pembroke are conscious about their food, their environment, and their customers. I also get the feeling that they are quite conscious about the effects of their food, too. How often can you finish a meal feeling better instead of overly full or on the verge of a carb-coma? I speak from experience; it’s rare.
