Enchiladas Michoacanas are a traditional dish from the Mexican state of Michoacan known for their unique preparation where the topping, rather than the filling, are the main event. Made with corn tortillas dipped in a rich red sauce, made with guajillo chiles, and filled lightly with cheese, cabbage, fried potatoes, curtido, jalapeno and a thin piece of grilled chicken breast.
